The original ancient wheat. It has not been changed in nearly 10,000 years. Many people are able to eat Einkhorn that have not been able to eat wheat. It's a higher protein wheat that makes great breads and other baked goods. It does require a little tlc when being handled due to the low gluten. It requires much higher hydration that most wheat flours.
