Our Hard Red Spring Wheat is a more modern hybrid. This particular has a higher protein and is higher in gluten. This makes for wonderful tall loaves of bread.
This flour makes for wonderful baked goods, as well as a hearty whole grain cereal with the wheat berries.

Hard Red Spring is closer to what is found more in commerical market. Our stone grinding helps keep the nutritional values intact. We offer our Red Spring in whole grain, bolted (bran removed) or sifted all purpose. We also have limited berries available.
